The Bikini Cocktail

Yields 10 people

To make the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Syrup: Put all the items into a pan, bring to a gentle boil, mixing so the sugar melts. Next, turn off the heat allowing it to cool completely. Pour into a clean bottle, close it and refrigerate it chilled, it can be stored for up to one month.

For the Cocktail Base: Combine all the liquid ingredients into a big jug, allow it to infuse for an hour, then strain best through muslin, making it perfectly clear.

To serve: Measure 85ml of your batch mix into your stirring glass containing ice, and stir gently for a minute to chill. Strain to a cold coupe glass or a similar vessel, garnish with some cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
